How to Make Pancakes - Have Fun with Your Little One This Shrove Tuesday!

Pancake Day seems to be one of those days that creeps up on you quietly and gently reminds you Spring is just around the corner. Making them is one of those lovely traditions you can create for your family, choosing toppings, deciding which topping is best and of course eating them together around a table set for Spring. Use this recipe for a quick and easy Pancake Day treat.

To make 16 pancakes, you will need:

330g self-raising flour

1 tsp baking powder

1 tbsp sugar

1 tbsp vanilla extract

400ml almond, oat or soy milk

1 tbsp oil

Whisk the flour, baking powder, sugar, vanilla extract and a pinch of salt together in a bowl. Slowly pour the milk and stir until you have a smooth and thick batter.

Heat the oil in a non-stick frying pan over a medium to low heat. Put 2 tablespoons of batter in at a time to make small round pancakes. Do this in batches of 2 to 3 at a time.

Cook for 3-4 minutes until the edges are set and bubbles start appearing on the surface. Flip and cook the other side for a further 2-3 minutes until golden on both sides.

Serve the pancakes with toppings of your choice; banana slices, blueberries, strawberries, maple syrup and, or course, lemon.

Gather round the table with a choice of toppings and enjoy!
